What mood is your salad???

I traveled minimally through the holidays and taught only a few of my "raw food basics"classes for beginners. Typically people that come to these INTRO classes are already eating really healthy and want to know how to keep raw foods from being an overwhelming experience. campers lemonade image

This group was right on track with that and we had loads of fun swapping recipes and kitchen tips. I always talk to people about not getting too bogged down with equipment and complex recipes.

For those living life in the fast lane, I always recommend a speedy salad as a vehicle for excellent raw nutrition.

I heard a lot of people saying they are tired of boring 'ole salads so we talked freely a good bit on how to keep salads interesting because they are so easy when life gets busy.

Salads are simple for me because I have jars and jars of seeds available at any given time... many soaking or sprouting. Same thing with nuts. I also make sure my fridge is happy with leafy greens and fresh veggies.

I really never follow "recipes" for salads. I just throw in what feels right.

In the picture featured here my mood was: baby greens, cucumber, tomato, avocado, sunflower seeds, chia seeds, pumpkin seeds, plump medjool dates and sprouted adzuki beans. That's it. Simple. Delicious.

What's boring about that? It's got sweet and savory flavours with crunch and creamy textures. Divine, I tell ya! Divine.

SALAD TIP:

Use a bendy-style, flexible cutting board so when you are finished cutting up your veggies, just pour all the remaining juiciness right on top of this lovely mound of green goodness!

Yesterday's mood: Torn kale, shredded carrots, bio-dynamic raisins, and ground flax seeds. I also like using fresh blueberries on this salad when local and in season.
