Sautéed Greens with Garlic and Dates

When we first opened our doors in Albany, Georgia, very few in this area even knew what kale was. Now it is our most sought after green!

You may also substitute 1 pound of green beans when leafy greens are hard to find.

Ingredients

  • 3 Tbsp olive oil
  • 6 - 8 garlic cloves, minced
  • 1 -2 Tbsp fresh minced ginger root
  • 3 - 4 large dates, pitted and minced
  • 1 bunch of greens, removed from spines and torn into small pieces (kale, chard, collards)
  • 2 Tbsp Bragg's Liquid Aminos
  • handful of pumpkin seeds

Heat oil in large pan, sauté garlic and ginger until golden. Stir in greens and Add dates, cook until bright green in color.

DO NOT COOK FOR LONG!!

Add Bragg's to taste. Toss in pumpkin seeds.
