Seaweed Veggie Salad by Chef Franky G

Chef Franky G kicked off our Vitality Masters Series at the one year anniversary potluck of my Raw Food Meetup Group here in Tucson, Succulent Raw Tucson. The abundance of top notch raw food brought by this juicy tribe is ALL*ways sure to please.

We had all kinds of yummy entrees: Lori’s Onion Bread topped  Bruchetta style with diced tomatoes and basil, Tiffany’s No-Fish Sushi Rolls, and Kathy’s Fresh lettuce wraps stuffed with yummy goodness. Our desserts left us salivating… Retta made Ice Cream, Benedict brought chocolate/coconut silver dollars … ah, and so much more. In lieu of the Radiation exposure from the Fukushima Meltdown, Frank Giglio gave us an in depth discussion on sea veggies: which ones are best, where to get them and how to use them. We sampled the demo recipe, Seaweed Veggie Salad, and it is one that works for everyone… even if not a fan of sea vegetables. The bulk is veggies in a creamy dressing with seaweed mixed in. It is simple, as you acquire a taste for kelp and dulse, increase the amount you add.

The salad is so simple that my eight year old son got in on the action. He sliced all the cucumbers on the madolin, shredded all the carrots by hand and had a blast soaking the seaweed and watching it E-X-P-A-N-D. His favorite part was picking out the tiny shells that were still on the dried seaweed – we’re talking sealed freshness from sea to YOU!

*Why do we LOVE cucumbers soooo much???

They are super hydrating and one of the most alkalizing foods on the planet. This mandolin makes slicing fun, quick and easy — just watch those fingers!

Seaweed Veggie Salad

1/2 pound shredded carrots

1/2 pound thinly sliced cucumbers

about 3 -4 pieces of kelp, reconstituted and chopped thin

handful of dulse, torn into small pieces

handful of raisins

handful of chopped scallions

tablespoon chopped parsley

2 tablespoons sesame seeds

Toss all ingredients in a medium sized salad bowl.

Creamy Raw Vegan Dressing

1/2 cup Brazil nuts, soaked

1/4 cup olive oil

1 tablespooons miso

1/4 teaspoon turmeric

1 tablespoon FRANK’S FINEST CURRY SPICE BLEND

dash of black pepper

2 tablespoons brown sesame seeds

2 tablespoons lemon juice

handful parsley

spring water, as need to blend, start with 2 tablespoons

Blend all ingredients in a HIGH SPEED BLENDER until a mayonnaise-like consistency.

Then stir into salad until it is all evenly coated. In*joy!

VITALITY MASTERS SERIES – SUCCULENT STYLE

Creating life in this last trimester of pregnancy has not only renewed my total
faith in a HEALTHY DIET AND LIFESTYLE but it has jump started my creative juices…
When I began pulling together The Vitality Masters Series, it was in celebration of
our ONE YEAR ANNIVERSARY POTLUCK. Then, the experts in this field were all saying
YES and while brainstorming, we realized there was NO WAY to fit in SO MUCH FUN into one night!

I’ve already got enough guests and curriculum to cover MONTHS of our calendar…

already lined up and waiting on confirmation of dates and locations. I’ve also got loads
of goodies and freebie stuff they are sharing with us! WooHoo! I’ve already started
working on our folders for the 29th and feeling the sense of generosity of our
guests – abundance!!

Our ANNIVERSARY POTLUCK is this weekend. We’re keeping this potluck true to our
roots of high-vibe social gatherings.

For those of you that wish to get some kitchen
inspiration, we’ll be showing a recipe demo video that Chef Franky G, author of RAW
FOR ALL, made especially FOR US. He has addressed the questions our members sent in.
He’ll also address the current hot topic of sea veggies – which ones are best and
how to use them in a tasty way! We’ll also get his SMOOTHIES 101 crash course in
making the most out of your budget- conscious ingredients. He has sent los of
samples and I’ll be making a few of his recipes to tantalize our taste buds.

By the way… NOW is the time to plan your potluck dish for Sunday night. We have
been MEGA impressed by the quality items we feast on at these gatherings.

Frank Giglio is a classically trained chef from the New England Culinary Institute in Montpelier, VT and a graduate of The Institute for Integrative Nutrition in NYC. Since the age of 15, Frank has fully immersed himself into the culinary world. Young and intrigued, Frank went on to apprentice under some of the countries top chefs where he was able to find a deep understanding for the creative process of working with food, as well a learning the fine art of tastes and flavors.

As the years past, Chef Giglio sought after a deeper connection to the theories of raw foods and cleansing, which led him to the Tree of Life Rejuvenation Center in Patagonia, AZ. With a strong passion for using food as medicine Frank works greatly to produce sustainable cuisine, which to him, means seeking the highest quality foods grown locally and in alignment with the environment.
