Using Raw Collard Greens as Wraps

I love seeing beauty on my plate. These make such a lovely LIVING presentation over tortilla wraps any day. What a gorgeous way to get your GREEN VIBE on.

TECHNIQUE:

First, wash the collard leaf well with cool water. I like to also rub both side with a damp towel to bring out the natural luster.

Slice out the spine (stem) all the way up to through the most fibrous parts so it will roll smoothly.

The smaller leaves are more tender and make little baby wraps. PURRfect for finger food trays.

The larger leaves can be cut to make two mini wraps. You can also make one mega roll by simply overlapping the bottom “flaps” and tucking as you roll.

Place your filling in a row, across the width of the leaf, about 1/4 of the way up from the base. The base is the fatter part of the leaf where you just cut away the spine.
