Lemon Cake with Apple Blossoms

You know you’re a “foodie” when you post multiple pictures of your cake creation and none of the guests at the party 😉 (Really that is more because I put my iPhone down when folks start arriving)

This post is a bit different from most of what you’ll find on my site. It isn’t raw or vegan but it is free of any artificial colors or flavors and gluten, too! It’s a birthday cake that my daughter dreamed up weeks prior to my mother’s birthday. We picked apple blossoms, juiced and zested lemons and sifted flour. It was truly a love explosion cake and when I posted pics on Facebook everyone PM’ed me for the recipe.

This is hands down the moistest and lightest gf cake I have ever tasted in my life. We even ate it cold out of the fridge for brekkie (yes!) and it was still soft and heavenly!

1/2 lb unsalted butter

4 large eggs

2 cups coconut sugar

1/3 cup lemon, zest of, grated on microplane

3 cups all purpose Gluten Free flour

dash mineral salt

1/4 cup fresh lemon juice

3/4 almond milk

1 teaspoon pure vanilla



2 cups organic confectioners sugar

3 1/2 tablespoons of fresh lemon juice


Preheat oven to 350°F.

Grease the bottom of a 9″ springform pan.

Cream butter, using paddle attachment, and 2 C coconut sugar in bowl of electric mixer until light and fluffy, approximately 5 minutes.

With mixer on medium speed, add eggs, 1 at a time, and the lemon zest

Sift together flour and salt into a bowl

In another bowl, combine 1/4 C lemon juice, almond milk and vanilla.

Alternately add flour and milk mixture to batter, beginning and ending with flour mixture.

Bake 40 – 45, until tester comes out clean.

When cake is done, cool 10 minutes. Remove from pan. Allow to fully cool.

Glaze: Combine confectioners’ sugar and lemon juice in a bowl, mixing with whisk until smooth.

Pour over the tops of the cakes and allow to drizzle down the sides.

Garnish with raspberries, lemon slices and apple blossoms.
