Love Rings – Crunchy Raw Vegan Onion Rings

You’ll be amazed at how much these look like crispy fried onion rings and the flavor will absolutely delight you. My favorite way to eat them is sprinkled on a salad. It gives it a savory crunch (much better for you — and tastier, too — than bacon bits or those funion onion thingys)

3/4 cups almonds flour (grind them or use almond pulp)

3/4 cups ground golden flaxseeds

1/2 cup extra-virgin olive oil

2 T dried herbs (parsley, thyme, rosemary)

1/2 t garlic powder

1/4 t sea salt

*filtered water

1 pound of large sweet onions sliced into love rings

Combine all ingredients except for the onions — and use the water only as/if moisture is needed depending on flour/pulp. Slice the onion into 1/4in thick rounds. Coat each round with the breading mixture. It should be just moist enough to stick. Then, arrange the slices on a dehydrator tray with a mesh liner as pictured above for proper air flow and faster drying time. Dehydrate at 110 degrees for 18-24 hours or until the desired crispness is achieved.
