Pie Crust, No Bake – Gluten Free and Raw Vegan

Looking for a perfect pie crust that is gluten-free, raw and vegan?

Look no further… Here’s my favorite! It tastes like a graham cracker cookie —

and since there is no baking required, it is perfect for a quick POUR IN SUMMER PIE!

Great for sliced peaches, strawberries, blueberries… Oh, sweet summer, how we love your fruity abundance!

Tasty Tip: Drizzle fruit with a tiny bit of honey and accent the flavor with herbs like cinnamon, fresh mint or even thyme!

Pictured to the right is an assortment of various fillings for this yummy crust. My favorite is the GREEN GODDESS MINI PIE, a chocolate ice cream-type pie with an interesting green twist. This pie was our biggest summer seller in the Bee Green Deli. It is naturally raw, vegan, contains no gluten and receives  BIG KUDOS for BIG FLAVOR.

Gluten Free Crust Ingredients

1 cup coconut flakes

1 cup almonds

6 dates

1/4 tsp sea salt


To Make the Crust

No baking necessary. Buzz all ingredients in a food processor. Stop as you see it just begin to get a buttery consistency. It needs to be still a little crumbly.   With slightly wet hands, press crust mixture equally into 4 ramekins or small pie pans so that it coats the bottom and sides of each ramekin/pie pan.
