One of my favorite treats as a kid was those bright orange creamy pushup pops my mom would let us buy when the ice cream truck came around. Now that those high sugar, dairy, and yuck additive days are over, here’s how I get my fix. It’s great as a smoothie or a frozen treat. More ideas will be in our upcoming book. =)
1 cup orange juice
1 frozen banana, cut in half
2 clementines, peeled
1/2 cup fresh pineapple, chunked (optional but FABULOUS)
4 dates, pitted and soaked in 1/4 cup OJ for 1/2 hour
soaking juice from dates
dash Vanilla extract or seeds scraped from 1/2 vanilla bean
Buzz all ingredients in a high speed blender until creamy and frothy.
Serves 2, generously.
**I’m known for throwing a handful of kale in ALL of our smoothies. You cannot taste this green beauty but it will change the color for discerning kiddos.
